Gutti Vankaya

Ingredients

  • 500 gms Small Brinjals
  • 2 Onions (finely chopped)
  • 1/2 tsp Turmeric Powder
  • Salt as per taste

For Masala Powder:

  • 2 tsp Oil - 2 tsp
  • 3 tbsp Coriander Seeds - 3 tbsp
  • 1/2 tsp Cumin Seeds - 1/2 tsp
  • 1/2 tsp Asafoetida Powder - 1/2 tsp
  • 6 Dry Red Chillies - 6
  • 1 1/2 tsp Chana Dal - 1 1/2 tsp
  • 1 1/2 tsp Urad Dal - 1 1/2 tsp
  • 1 cup Tamarind Extract - 1 cup
  • 1/4 tsp Salt - 1/4 tsp

For Tempering:

  • 6 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1/2 tsp Cumin Seeds
  • 1 Dry Red Chilli (halved)
  • 1 tsp Urad Dal
  • Curry Leaves (few)

Instructions

  • Heat 2 tsp of oil in a deep frying pan for the masala.
  • Add all masala ingredients (except tamarind and salt) and fry until the dals turn golden.
  • Mix the fried spices with tamarind and salt, then grind into a fine powder.
  • Cut a cross in the base of brinjals, stuffing them with the masala powder.
  • Heat 6 tbsp of oil for tempering and fry mustard seeds, cumin seeds, dry red chilli, urad dal, and curry leaves.
  • Add onions and sauté for 2 minutes, then add brinjals, turmeric powder, and salt.
  • Fry for 2 minutes, adding 2 tbsp of water, lowering the heat, and covering the pan.
  • Simmer until brinjals are cooked, turning occasionally.
