Kolhapuri Chutney

Coriander Leaves – 1 cup, chopped
Oil – 4 tblsp
Onions – 2, chopped
Garlic – 4 to 5 flakes
Dry Coconut – 100 gms, grated
Red Chillies – 1 kg

1. Wash coriander leaves and pat dry.
2. Heat a little oil n a non stick pan.
3. Stir fry the onions, garlic, coconut and coriander leaves separately.
4. Keep aside to cool.
5. Mix the fried ingredients with red chillies and grind to a powder.
6. Store in an airtight jar and use as required.
