Bengali Tomato Chutney

Ingredients:
Tomatoes – 1/2 kg, finely chopped
Oil – 1 tblsp
Red Chillies – 2, dried
Mustard Seeds – 1 tsp
Sultanas – 15
Dates – 8, stoned
Salt – 1 tsp
Sugar – 1/2 cup

Dry Roast and Grind to a fine powder
Fenugreek Seeds – 1/2 tsp
Aniseed – 1/2 tsp
Cinnamon – 1/2 tsp
Green Cardamom – 1/2 tsp
Bayleaf – 1

Method:
1. Heat oil in a non stick pan.
2. Add red chillies and mustard seeds.
3. Fry for a 2 to 3 minutes.
4. Add the tomatoes, sultanas, dates, salt and sugar.
5. Cook till it attains a smooth texture.
6. Sprinkle the ground powder.
7. Use as required.
