Rotti Dosai

Bread Loaf – 1, crumbled
Besan Flour – 1/4 cup
Green Chillies – 2, finely chopped
Rice Flour – 1/4 cup
Curry Leaves – 1 sprig
Coriander Leaves – 1 to 2 tblsp, finely chopped
Asafoetida Powder – 1/2 tsp
Cumin Seeds – 1 tsp
Salt as per taste
Oil for shallow frying

1. Mix together all ingredients except oil.
2. Gradually add 1 to 1 1/4 cups of water.
3. Mix to make a thick batter of pouring consistency.
4. Heat a tawa over high heat.
5. Lower heat and smear a little oil.
6. Pour a ladle of batter into centre of tawa.
7. Spread it quickly using a circular motion with back of ladle.
8. Dribble 1 tsp of oil around edges.
9. Raise heat and cook for 2 minutes till the bottom is golden brown.
10. Turn over carefully and fry the other side till crisp and golden.
11. Serve hot.
