Quick Vadai


Rice Flour – 1 cup
Maida – 1/2 cup
Besan Flour – 1/2 cup
Salt as per taste
White Sesame Seeds – 1 tsp
Cumin Seeds – 1/2 tsp
Asafoetida Powder – 1/2 tsp
Coconut – 6 tblsp, grated
Green Chillies – 3, minced
Ginger – 1/2 inch piece, grated
Coriander Leaves – 2 tblsp, finely chopped
Ghee – 1 1/2 tblsp
Oil for deep frying

1. Combine all the ingredients, except ghee and oil, in a bowl.
2. Mix well.
3. Sprinkle in 1/2 cup of water gradually and mix to a thick, stiff batter.
4. Heat ghee in a small pan and mix into batter.
5. Heat oil in a kadai.
6. Take a ladle of batter and flatten it into a 2 inch round patty.
7. Slip gently into hot oil.
8. Fry vadai in batches, turning frequently, till golden brown and crisp.
9. Remove and drain on a kitchen paper.
10. Serve hot.
