Rice Kachori


Maida – 1 cup
Besan Flour – 1 cup
Turmeric Powder – 1/2 tsp
Oil – 3 tblsp
Oil for deep frying
Salt as per taste

For the Filling:
Basmati Rice – 1 cup
Curry Powder – 1 tblsp
Oil – 1 tblsp
Salt as per taste

1. To prepare the filling, heat oil in a pan.
2. Add the cooked basmati rice and fry for 30 seconds.
3. Add salt and curry powder.
4. Fry for another minute or two.
5. Remove and keep aside.
6. Mix the maida, besan, turmeric powder, 3 tblsp oil and salt.
7. Add little water and knead into a dough.
8. Divide the dough into 6 to 8 portions.
9. Roll out each portion into a 3 inch round circle.
10. Add a portion of the filling and fold into a ball once again.
11. Roll out into a 3 inch kachori.
12. Deep fry in oil a few at a time over moderate heat.
13. Remove when the kachoris are crispy and brown.
14. Serve hot.
