Vegetable Coconut Soup Recipe

Coconut Milk – 2 cups
Carrots – 150 gms, sliced
Cabbage – 150 gms, sliced
Cauliflower – 100 gms, sliced
Galangal – 100 gms
Lemon Grass – 50 gms, cut into diamonds
Lemon leaves – 6
Red Chillies – 4, cut into diamonds
Salt as per Taste
Fish Sauce as per taste
Lemon Juice – 4 tbsp
Chilli oil – 2 tsp
Green Coriander – 4 sprigs

1. Heat a pan over moderate flame.
2. Add the coconut milk along with all the ingredients (except chilli oil) and green coriander.
3. Bring to a boil and cook for 5 to 10 minutes.
4. Remove from the heat.
5. Garnish with chilli oil and green coriander.
6. Serve hot.
