Ingredients

  • 1 cup Tamarind Extract
  • 10 Sambar Onions (Shallots)
  • 10 Garlic Cloves
  • 2 to 3 tsp Chettinad Sambar Powder
  • 1 tsp Coriander Seeds roasted and powdered
  • 1 cup Red Pumpkin (or Brinjal) unpeeled and cut into 1/2 inch cubes
  • as per taste Salt as per taste
  • 1 tsp Jaggery Powder
  • 1 tsp Rice Flour

For Tempering:

  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1/2 tsp Fenugreek Seeds
  • 1/2 tsp Saunf
  • 1 tsp Urad Dal
  • 1/4 cup Curry Leaves

Instructions

  • Heat oil for tempering in a large pan.
  • Add the tempering ingredients and fry.
  • When the mustard seeds start to splutter, add the sambar onions and garlic.
  • Saute for a minute.
  • Add sambar powder and powdered coriander seeds.
  • Saute for about 30 seconds.
  • Add the pumpkin and saute for a minute.
  • Add the tamarind extract and salt.
  • Bring it to boil.
  • Lower heat, cover pan and simmer for about 15 minutes or till pumpkin is tender.
  • Add jaggery and mix well.
  • Add the rice flour with 1/4 cup of water.
  • Pour this into the kuzhambu and simmer uncovered till it thickens.
  • Serve hot with plain rice.
