Palak Makai Pulao Recipe

Basmati Rice – 1 cup, cooked
Spinach – 1/2 cup, blanched and pureed
Sweet Corn – 1/2 cup, steamed
Cumin Seeds – 1 tsp
Asafoetida – 1/2 tsp
Onion – 1, chopped
Garlic – 1 tblsp, chopped
Green Chilli – 1, finely chopped
Turmeric Powder – 1/2 tsp
Dry Mango Powder – 1/4 tsp
Salt as per taste
Oil – 1 tblsp

1. Heat oil in a pan and add cumin seeds.
2. When they crackle, add asafoetida and chopped onions.
3. Saute until it is translucent.
4. Add the garlic, green chilli, turmeric powder and saute for a few minutes.
5. Add the spinach puree and bring to a simmer.
6. Add salt, mango powder, basmati rice and sweet corn.
7. Mix well and serve hot.
