Vegetable Vangi Bhath


Basmati Rice – 2 cups
Vangi Bhaat Masala – 3 tsp
Coconut Oil – 3 tsp
Mustard Seeds – 1/2 tsp
Mixed Vegetables – 2 cups
Lemon Juice – 2 tsp
Salt to taste

1. Steam the vegetables till just half tender.
2. Keep aside.
3. Heat the oil in a non-stick pan.
4. Add the mustard seeds and allow to splutter.
5. Mix the steamed vegetables and the spices and stir gently for 2 minutes.
6. Mix in the rice and toss gently adding the lemon juice.
7. Serve with fresh curd.
