Corn Rice and Pea Soup Recipe

Ingredients:
Vegetable Soup – 200 ml
Corn Niblets – 100 gms
Peas – 1 cup, shelled
Basmati Rice – 1 cup, cooked
Lemon Juice – 2 tsp
Salt
Pepper

Method:
1. Bring the vegetable stock to boil.
2. Add the corn niblets and the peas.
3. Add salt and pepper to taste and bring the soup to boil.
4. Simmer till the corn niblets and peas are slightly tender.
5. Add the rice and simmer for a minute more.
6. Mix in the lemon juice.
7. Serve piping hot.
