Corn and Vegetables Pancakes

Ingredients:
Potatoes – 2, peeled and grated
Carrot – 1, peeled and grated
Onion – 1, grated
Zucchini – 1, grated
Fresh Corn – 1 cup
Flour – 1 cup
Milk – 1/4 cup
Baking Powder – 1/8 tsp
Nutmeg – 1/8 tsp
Salt a pinch
Pepper a pinch
Red Capsicum – 2, roasted, skinned and seeded

Method:
1. Mix all the ingredients together.
2. Add salt, pepper and nutmeg. Adjust as required.
3. Heat a non-stick pan over moderate heat.
4. Take 2-3 tablespoons of the mixture and spread evenly in a round shape.
5. Cook on moderate flame until it is brown on both sides.
6. Remove and Serve.
