Crunchy Cake Recipe

Crunchy Cornflakes – 1 1/2 cups
Eggs – 3
Flour – 3/4 cup
Oats – 3/4 cup
Sugar – 1 cup
Butter – 1 cup
Baking Powder – 1 tsp
Vanilla Essence – 1 tsp
Jam – 3/4 cup
Icicing Sugar – 1 tblsp
Cream – 1 1/2 cup
Mixed Candy for decorating

1. Beat jam till smooth.
2. Sieve flour, baking powder, cream butter and sugar till light and smooth.
3. Add beaten eggs one at a time to butter mixture.
4. Mix well.
5. Add vanilla essence and fold well.
6. Prepare a cake tin by dusting flour.
7. Put cake mixture in tin.
8. Bake in a preheated oven at 175C till done.
9. Remove from tin.
10. Cool.
11. Sieve icing sugar and fold in cream.
12. Slice the cake horizontally into 2 parts and sandwich with 1/4 of cream and 1/2 from jam.
13. Sprinkle 1 cup cornflakes.
14. Spread cream all over the cake, then jam and sprinkle cornflakes.
15. Decorate with candy.
