Pineapple Pudding Cake


Eggs – 3
Sugar – 1 cup
Butter – 1 cup
Flour – 1 1/2 cups
Baking Powder – 1 tsp
Pineapple Essence – 1 tsp
Pineapple Rings – 4 to 5
Fresh Cream – 1 1/2 cup
Icing Sugar – 1/4 cup
Salt – a pinch
Cherries as required for garnish

1. Sieve flour, baking powder and salt.
2. Mix butter and sugar and cream till fluffy.
3. Add essence and mix well.
4. Add flour mixture to butter mixture and fold till smooth.
5. Chop 2 rings of pineapple and roll them in 1 tbsp flour.
6. Sieve and add to dough. Fold well.
7. Pour this into a greased cake tin.
8. Bake in a preheated oven at 175C till done.
9. Cream icing sugar with cream till fluffy.
10. Cut the cake in two equal parts.
11. Spread a layer of icing and 1 pineapple ring chopped.
12. Sandwich the cake.
13. Pour rest of the icing on top.
14. Arrange pineapple rings and decorate with cherries.
