Ingredients:
Carrot – 2 cups
Methi Leaves – 1 cup, finely chopped
Oil – 1 tblsp
Fenugreek Seeds  1/2 tsp
Turmeric Powder – 1/4 tsp
Coriander Powder – 1/2 tsp
Amchoor Powder – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Salt as per taste

Method:
1. Heat oil in a vessel.
2. Add the fenugreek seeds and fry for a while.
3. Now add the cut vegetables, salt and turmeric.
4. Mix well and cook covered on slow flame till done.
5. Mix in the remaining spices, cook till dry.
6. Serve with rice.
