Methi Biryani


Basmati Rice – 1 cup
Fresh Methi Leaves – 2 cups
Jeera – 1 tsp
Turmeric Powder – 1 tsp
Ghee – 1 tblsp
Coriander Powder – 1 tsp
Red Chilli Powder – 1 tsp
Dry Mango (Amchoor) Powder – 1 tsp
Raisins – 1 tblsp
Cashewnuts – 1/4 cup
Salt to taste

1. Wash and soak the rice for an hour.
2. Wash and cut the methi leaves finely.
3. Heat ghee in a vessel, add the jeera and fry for a while.
4. Add the methi leaves and cook for a minute.
5. Now add the rice, salt and turmeric powder.
6. Mix well, add appropriate amount of water and cook covered on low flame till done.
7. Mix all the other spices and dry fruits.
8. Serve hot.
