Spicy Peanut Chicken Rice


Long Grained Rice – 2 cups
Peanut Oil – 2 tblsp
Onion – 1, sliced
Tomatoes – 2, chopped
Garlic – 2 cloves, chopped into small pieces
Curry Powder – 1 1/2 tsp
Chicken Stock – 4 cups
Lime Juice – 2 tsp
Peanut Butter – 2 tblsp
Parsley – 2 to 3 tsp, chopped
Salt as per taste
Pepper as required

1. Heat the oil and fry the onions till translucent.
2. Add the garlic and the tomatoes and stir-fry for 2-3 minutes.
3. Mix in the rice and the spices.
4. Fry for 2 minutes more on medium heat.
5. Add the stock, lime juice and cover with a lid and cook till the rice is almost done.
6. Open the lid and mix in the peanut butter.
7. Cover and cook till the rice is tender.
8. Garnish with parsley and serve.
