Stir-fried Vegetables with Rice


Brown Rice – 1 cup
Vegetable Stock – 2 1/2 cups
Ginger – 1/2 inch piece
Garlic – 1 clove
Lemon Rind – 1/2 tsp
Button Mushrooms or Shiitake Mushrooms – 100 gms
Vegetable Oil – 1 tblsp
Carrot – 50 gms
Courgette – 1
Broccoli Florets – 1 cup
Spring Onion – 2
Soya Sauce – 2 tsp
Sesame Oil – 2 tsp

1. Wash the rice and place in a pan.
2. Add the vegetable stock, and the thinly sliced ginger.
3. Also, add the lemon rind and the garlic.
4. Slowly bring to a boil and simmer covering with a lid till the rice is tender.
5. Discard the flavorings and keep the rice hot.
6. Slice the mushrooms and the carrots into circles.
7. Cut the spring onions thinly.
8. Heat the oil and stir-fry the mushrooms and carrots for 2 minutes.
9. Mix in the rest of the vegetables.
10. Stir-fry and keep the vegetables firm.
11. Mix in the flavoured rice and toss briefly.
12. Add soya sauce and sesame oil.
13. Toss again and Serve.
