Coconut Milk Kanji


Rice – 1 cup
Garlic – 1 clove
Fenugreek Seeds – 1 tsp
Coconut Milk – 1 cup
Water – 4 cups
Oil – 1 tblsp
Salt as per taste

1. In a pressure cooker warm oil, put methi seeds, add garlic, rice salt and water, cook it for 2-3 whistles so that the rice gets cooked very well.
2. After the steam goes off mash the rice and add coconut milk, cook for 2-3 minutes.
3. Coconut milk kanji is ready.
