Masala Pumpkin Recipe

Pumpkin – 1/2 kg
Mustard Oil – 2 tblsp
Ginger – 2 tsp, chopped
Green Chillies – 2, chopped
Asafoetida – a pinch
Fenugreek SEeds – 1/2 tsp
Red Chilli Powder – a pinch
Salt – 1 1/2 tsp
Sugar – 1 tsp
Amchur Powder (Dried Mango Powder) – 1 1/2 tsp

1. Cut pumpking into small pieces.
2. Heat oil in a frying pan.
3. Fry the ginger for 2 minutes and add green chillies, asafoetida, fenugreek and red chilli powder.
4. Continue to fry for a minute.
5. Add pumpkin pieces, salt and sugar.
6. Cover and cook on low heat for 30 minutes till pumpkin is tender.
7.  Mash lightly and remove from heat.
8. Add amchur powder.
9. Stir well and Serve.
