Green Banana Curry Recipe

Green Bananas – 6
Ghee – 1 cup

For the Gravy:
Ghee – 1/2 cup
Onions – 3, grated
Garlic – 8 cloves, ground
Ginger – 1 inch piece, ground
Cinnamon – 1 inch piece
Green Cardamom – 6
Black Cardamom – 3, powdered
Bay Leaf – 2
Coriander Seeds – 3 tsp, powdered
Garam Masala Powder – 1 tsp
Salt – 1 tsp
Curd – 2 cups
Fresh Coriander – 2 tblsp, chopped

1. Bring a large pan of water to the boil.
2. Add the whole, unpeeled bananas and cook for 10 minutes.
3. Drain, cool slightly and peel.
4. Cut each banana in half and then cut each piece lengthwise into half again.
5. Gently press and flatten the banans to 1/4 inch thickness.
6. Heat 1 cup of ghee in a pan and fry the bananas till golden.
7. Drain and keep aside.
8. To make the gravy, heat 1/2 cup of ghee in a pan.
9. Fry the grated onions on a moderate flame till golden.
10. Add 2 tblsp of water and stir for a minute.
11. Add garlic and ginger.
12. Cook for 2 minutes.
13. Add the remaining spices and salt.
14. Cook for 2 minutes, adding curd a litle at a time.
15. Pour in 350 ml of water, cover and cook on low heat for 10 minutes till gravy has thickened.
16. Put the fried bananas in gravy, cover and simmer for 5 minutes.
17. Garnish with chopped coriander leaves.
18. Serve.

    To add- avoid sour curd. If u r using, add milk later.
