Sooji ka Halwa Recipe

Ghee – 2 tblsp
Green Cardamom – 2
Sooji/Semolina – 1 cup
Milk – 2 cups
Sugar – 1/2 cup
Saffron Strands – 1/4 tsp, soaked in 3 tblsp of warm milk
Seedless Raisins – 1 tblsp
Almonds and Pistachios – 1 tblsp, blanched, peeled and finely sliced

1. Heat the heat in a heavy bottomed pan on moderate heat.
2. When hot, add the cardamom pods.
3. Add the sooji and fry it on low heat for 4 to 5 minutes until it turns gentle brown.
4. Add the milk and the sugar.
5. Stir vigorously to avoid lumps.
6. Cook for about 6 to 7 minutes, stirring all the while, till the milk is absorbed.
7. Add the saffron strands and allow it to simmer for a few minutes.
8. Decorate with raisins, almonds and pistachios.
9. Serve hot or cold.
