Sri Lankan Brinjal Curry Recipe

Brinjal – 4 to 5, cut into long pieces
Onion – 3
Tomato – 2
Green Chilli – 2
Turmeric Powder – 1 to 2 tsp
Coconut Milk – 1 cup
Chilli Powder as required
Salt as per taste
Mustard Seeds – 1/2 tsp
Oil – 1 cup
Curry Leaves – to garnish.

1. Heat a pan over moderate heat and stir-fry the brinjal.
2. Keep aside.
3. In the same pan heat 3 tblsp oil.
4. Add mustard seeds, turmeric powder and chilli powder.
5. Fry till the onion becomes brown.
6. Add the tomatoes and continue to fry for a minute or two.
7. Then add the coconut milk.
8. Boil in moderate heat until thick.
9. Add brinjal and salt. Let it simmer for 2 to 3 minutes
10. Garnish with curry leaves.
11. Serve hot with rice.
