Baked Bean Soup Recipe

Onion – 1, medium
Garlic – 1 flake
Baked Beans – 1 can (450 gms)
Oil –  1 tblsp
Dry Thyme – a pinch
Vegetable Stock – 3 cups
Nutmeg – 1/4 tsp, freshly grated
Salt – 1 1/2 tsp
Black Pepper – 1/2 tsp, freshly ground

1. Chop the onion and garlic.
2. Heat the oil in a pan over moderate heat.
3. Add the onion and garlic.
4. Saute until they turn light brown.
5. Mash the baked beans.
6. Add the beans to the pan.
7. Add the thyme and vegetable stock.
8. Simmer for about 10 minutes.
9. Mix in the nutmeg, salt and pepper.
10. Remove from heat and set aside.
11. Serve hot.

Note: Reheat the soup if required.
