Fried Okra

Ingredients:
Onion – 1, medium, chopped
Okra (Bhindi) – 500 gms
Oil – 2 tblsp
Chilli-Coriander Powder – 1/2 tsp
Turmeric Powder – 1/2 tsp
Garam Masala Powder – 1/2 tsp
Salt – 1 tsp
Coriander Leaves – 1 tblsp, chopped

Method:
1. Wash the okra and wipe dry.
2. Top and tail them and cut into 1/4 inch slices.
3. Heat the oil in a deep frying pan and fry the okra, turning them frequently until they turn soft.
4. Stir in the onion and saute until the okra are almost cooked.
5. Sprinkle in the chilli-coriander powder, turmeric powder, garam masala powder and salt.
6. Mix well.
7. Reduce heat and cover with a lid.
8. Cook for about 5 minutes until the okra are done.
9. Remove from heat and set aside.
10. Garnish with coriander leaves.
11. Serve.
