Carrot, Peas and Cauliflower Curry Recipe

Onions – 2, chopped finely
Carrot – 4, diced into one inch pieces
Cauliflower – 1, diced into one inch pieces
Peas – 1/2 cup
Oil – 2 tblsp

Grind Together:
Onion – 1
Ginger – 1/4 inch piece
Red Chillies – 10
Coconut – 1/2, scraped
Tamarind – 1 small lime sized
Garam Masala – 1/2 tsp
Salt – 2 tsp

1. Heat oil in a shallow pan.
2. Add mustard seeds.
3. When it splutters mix the onions and fry till transparent.
4. Add the raw vegetables and fry for 2 minutes.
5. Add the ground masala without water and fry again for 2-3 minutes.
6. Pour enough water, salt and tamarind extract.
7. Cover and cook till the vegetables are done and the gravy becomes thick.
8. Garnish with coriander leaves.
9. Serve hot.
