Vegetable Fry

Small Onions – 1/4 cup, peeled
Potatoes – 1/4 cup, diced
Drumsticks – 1/4 cup, cut into small pieces
Brinjals – 1/4 cup, sliced
Salt as per taste
Jaggery as per taste
Oil – 2 tblsp

Grind together:
Coconut – 1/4 cup, grated
Red Chillies – 8
Onion – 1, big
Ginger – 1 inch piece
Tamarind – 1 small lime sized
Garam Masala Powder – 1/2 tsp

1. Heat oil and add all the raw vegetables.
2. Fry in a reduced flame for few minutes.
3. Add ground mixture with 1 cup of water.
4. Cover and cook till the vegetables are tender.
5. Add salt and jaggery.
6. Mix well till it is dissolved.
7. When the curry is thick, add finely chopped curry leaves and remove from fire.
8. Serve hot.
