Duck Eggs – 2
Onion – 1 tsp, finely sliced
Green Chilli – 1, sliced, deseeded
Tomato – 1, finely chopped
Green Coriander – 1/2 tsp, finely chopped
Salt to taste
Cumin Seeds – 2 tsp
Oil – 2 tsp
1. Whisk the eggs and mix in all the ingredients except the oil.
2. Heat the oil in a heavy-bottomed frying pan, lower the flame and pour in the egg mixture.
3. Cook one side, then turn over and cook the other side.
4. Cut into pieces and serve as a snack or an accompaniment.
