Carrot Kurma Recipe

Ingredients:
Carrot – 1/2 kg
Tomatoes – 3
Dry Coconut – 1/2 cup, scraped
Green Chillies – 7
Ginger – 1/2 inch piece
Garlic – 7 flakes
Poppy Seeds – 1 tsp
Onion – 3, big
Cardamom – 2
Cloves – 2
Cinnamon – 1 inch piece
Turmeric Powder – 1/4 tsp
Salt – as per taste
Oil – 1 tblsp

Method:
1. Grind dry coconut, green chillies, ginger, garlic and poppy seeds.
2. Scrape and cut carrots into small pieces and cook.
3. Heat oil in a frying pan and add the spices, onions and fry.
4. When it is done, add chopped tomatoes and fry for a few minutes.
5. Add carrot and ground mixture with just enough water.
6. Boil till gravy thickens.
7. Serve hot.
