Duckling with Onions


Duckling – 1, boned, meat cut into pieces
Oil – 2 tbsp
Onions – 2, large, finely sliced
Chinese Wine – 2 tbsp
Soy Sauce – 1 tbsp
Hoisin Sauce – 1 tbsp
Chicken Stock – 1 1/2 cups
Salt and freshly ground Black Pepper to taste

1. Heat the oil in a kadai.
2. Stir fry the onions till light brown. Keep aside.
3. In the same oil, stir fry the duckling until lightly browned.
4. Add the Chinese wine, fried onions, soy sauce, Hoisin sauce and chicken stock.
5. Cook till the liquid is slightly reduced.
6. Season with salt and pepper.
7. Serve immediately.
