Prawns in Sweet And Sour Sauce

Prawns – 600 gms, cleaned
Eggs – 2, whisked
Salt – 1 tsp
Cornflour – 4 tsp
Oil – 3 tbsp
Capsicums – 40 gms, sliced
Onions – 20 gms, chopped
Sweet and Sour Sauce – 1/4 cup
Pineapple – 40 gms, sliced
Tomatoes – 40 gms, diced

1. Marinate the prawns with eggs, salt and 2 tsp of cornflour.
2. Heat the oil in a pan and deep fry the marinated prawns.
3. Remove, drain the excess oil and keep aside.
4. In the same pan, add the capsicums and onions and saute for a few minutes.
5. Add the sweet and sour along with the pineapple and tomatoes.
6. Stir in the remaining cornflour dissolved in water to thicken the sauce.
7. Cook for a few seconds.
8. Remove from heat.
9. Transfer into a serving bowl and serve hot.
