Zarda Pulao Recipe

Long Grained Rice – 1 1/2 kg
Sugar – 1/2 cup
Saffron – 1/2 tsp
Almonds, Pistachios, Walnuts, – 1/2 cup, sliced
Raisins – 1/2 cup
Cardamom Powder – 1/2 cup
Ghee – 3/4 cup

1. Soak rice in water for 15 minutes.
2. Drain and dry.
3. Heat ghee.
4. Add rice, raisins, nuts, saffron and cardamom powder.
5. Stir fry for 7 minutes on a low fire.
6. Add enough hot water so that the level is 2 cms above the level of rice.
7. Add sugar and stir.
8. Cover and cook till rice is done.
9. Stir now and then to avoid lumps or sticking.
10. Serve hot after the main meal.
