Potatoes – 250 gms, peeled, cut into small cubes
Vegetable Oil – 2 tbsp
Onions – 2, sliced
Cumin Seeds – 1/2 tsp
Green Chilli – 1
Garlic – 4 cloves, finely chopped
Ginger – 1 one inch piece, finely chopped
Salt to taste
Tomato – 1, large, chopped
Green Coriander – 1 1/2 tbsp, chopped

1. Heat the oil in a pan.
2. Saute the onions until golden.
3. Add cumin seeds, green chilli, garlic and ginger.
4. Saute for a minute.
5. Add the potatoes and salt.
6. Saute for 2 minutes.
7. Add 1/2 cup water and cook on a low flame until the potatoes are tender and the mixture is absolutely dry.
8. Add the tomato and cook for 5 minutes more.
9. Garnished with green coriander.
10. Serve hot.
