Goan Style Crispy Bhindi (Goan Kurkuri Bhindi) Recipe

Ladies Fingers – 15, small
Refined Flour – 2 tblsp
Coriander Powder – 1/4 tsp
Cumin Powder – 1/4 tsp
Pepper Powder – 1/2 tsp
Garlic – 1 tsp, finely chopped
Peanuts – 1 tblsp, coarsely ground
Sugar – 1/4 tsp
Salt as per taste
Oil for deep frying

1. Slice each lady’s finger vertically into four pieces.
2. Sprinkle with some salt and set aside for 10 minutes.
3. Mix together the flour, coriander powder, cumin powder, pepper powder, chopped garlic, peanuts, sugar, 1/2 tsp of salt and enough water to make a moderately thick batter.
4. Soak the ladies fingers in the batter for 5 minutes.
5. Deep fry till golden brown.
