Kairi – 500 gm, fresh and washed
Mangoes – 5, raw and medium
Mustard Oil – 1 cup
Red Chilli Powder – 2 tbsp
Aniseed – 2 tbsp, coarsely ground
Yellow Mustard Powder – 2 tbsp
Turmeric Powder – 1 tbsp
Salt – 2 tbsp
1. Dry the kairi on a piece of cloth till all the moisture is absorbed.
2. Coarsely grate the mangoes and squeeze out all the liquid.
3. In a large bowl, mix all the ingredients together and leave overnight to mature.
4. Store in a dry, airtight glass jars.
