Parwar – 10, medium, peeled, slit vertically

For the Filling:
Red Chilli Powder – 1/2 tsp
Coriander Powder – 3/4 tsp
Mango Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Garam Masala – 1/4 tsp
Salt to taste
Ghee – 1 tbsp
Cumin Seeds – 1 tsp

1. For the filling, mix all the ingredients together.
2. Add 3-4 drops of ghee to bind the mixture.
3. Stuff 1 tsp filling into each parwar.
4. Heat the ghee in a pressure pan.
5. Add the cumin seeds.
6. When they splutter add the stuffed parwars.
7. Any leftover stuffing can be sprinkled over the parwars.
8. Add 2 tbsp of water cover the pan and cook till 2 whistles.
9. Release the pressure immediately to retain the colour of the parwars.
10. Serve hot.
