Gucchi Pulao

Rice – 1 cup, cleaned, drained
Morel Mushrooms – 50 gms, soaked in warm water for 1/2 hour, drained
Clarified Butter – 1 cup
Cinnamon Sticks – 2
Cloves – 6
Green Cardamoms – 3
Black Cumin Seeds – 1 tsp
Onions – 1/2 cup, chopped
Salt to taste
Water – 2 cups

1. Heat the clarified butter in a kadai.
2. Add the cinnamon sticks, cloves, green cardamoms, black cumin seeds and onions.
3. Saute till the onions turn light brown.
4. Add the rice and salt.
5. Fry for a minute.
6. Add the mushrooms and water.
7. When the rice mixture comes to a boil, reduce the heat and cook covered till the rice is done and the water is absorbed.
8. Serve hot.
