Pumpkin Ki Sabzi


Pumpkin – 1 kg, diced into 1 inch cubes
Mustard Oil – 1/2 cup
Fenugreek Seeds – 1 tsp
Coriander Seeds – 1 tsp
Whole Red Chillies – 4, roasted
Turmeric Powder – 1/2 tsp
Salt to taste
Red Chilli Powder – 1 tsp
Dry Mango Powder – 1 tbsp
Sugar – 1 tsp

1. Heat the mustard oil in a kadai, add the fenugreek seeds, coriander seeds, whole red chillies and saute till light brown.
2. Add the pumpkin and mix well.
3. Stir in the turmeric powder, salt, red chilli powder, dry mango powder and sugar.
4. Cook on low heat till the pumpkin is done.
5. Serve hot.
