Tinda ka Bharta Recipe

Round gourd – 500 gms, medium-sized, peeled, boiled, grated
Clarified Butter – 3/4 cup
Onions – 1 cup, chopped
Tomatoes – 1 cup, chopped
Whole Red Chillies – 3
Cumin Seeds – 1 tsp, roasted
Red Chilli Powder – 1 tsp
Salt to taste
Dry Fenugreek Leaves – 1 tsp
Green Chillies – 5
Green Coriander – 2 tbsp, chopped

1. Heat the clarified butter in a kadai, add the onions and tomatoes and fry for a while.
2. Add the whole red chillies, cumin seeds, red chilli powder, salt, dry fenugreek leaves and mix well.
3. Cook until the tomatoes turn soft.
4. Add the round gourd and cook covered on low heat.
5. Mix well.
6. Serve hot, garnished with green chillies and coriander.
