Khade Masale Ka Maas Recipe

Lamb – 1 kg, cut into pieces
Oil – 1 cup
Black Cardamoms – 6
Cloves – 6 to 8
Black Peppercorns – 1 tblsp
Cinnamon Sticks – 3 to 4
Bayleaves – 5 to 6
Onions – 3, finely sliced
Salt to taste
Coriander Seeds – 1 1/2 tblsp
Cumin Seeds – 1 tsp
Whole Red Chillies – 10
Ginger – 1 three inch piece, julienned
Garlic – 8, whole pods
Yogurt – 1 cup

1. Heat oil.
2. Add black cardamoms, cloves, black pepper corns, cinnamon sticks, bayleaves and onions.
3. Fry till the onions are translucent.
4. Add the remaining ingredients and the lamb.
5. Cook covered on a low flame, stirring occasionally.
6. When the lamb is nearly done, add the yogurt and mix well.
7. Simmer till the lamb is fully done and the oil separates.
8. Serve hot.
