Spinach – 250 gms, chopped
Wadi – 10 gms
Oil – 2 tblsp
Bayleaf – 2
Turmeric Powder – 1 tsp
Water – 50 ml
Salt to taste
Sugar – 2 tsp
1. Heat the oil.
2. Fry the wadi and keep aside.
3. In the same oil, add the bayleaves, turmeric powder and spinach.
4. Fry for 2 minutes.
5. Add the water and wadi along with salt to taste and sugar.
6. Cook till the water dries out and the spinach is cooked.
7. Serve hot.
Wadi is a small sun-dried dumpling made with black gram. The black gram is soaked, ground to paste and mixed with spices. Small dumplings of the paste are then spread on plastic sheets and left in the sun till they become dry and hard. These days, they are also available in shops and supermarkets.
