Ingredients:
Prawns – 650 gms, shelled and cleaned
Oil – 2 tblsp
Salt to taste
Coconut Milk – 2 cups
Lemon Juice – 1 1/2 tblsp
For the Coconut Paste:
Fresh Coconut – 1/4 cup, grated
Garlic – 10 cloves
Dry Red Chillies – 4
Cumin Seeds – 1 tsp
Coriander Seeds – 1 tsp
Method:
1. Put the coconut, garlic, red chillies, cumin and coriander seeds in a blender and blend to make a smooth paste.
2. Heat the oil, add the coconut paste and saute on low heat for 10 minutes.
3. Add the prawns, salt and coconut milk.
4. Simmer on low heat till the prawns are cooked.
5. Stir in the lemon juice.
6. Serve hot with rice.
