Easy Egg Salad

Eggs – 6, hard boiled
Green Capsicum – 2
Red or Yellow Capsicum – 1
Macaroni – 1 cup, boiled

For the Dressing:
Olive Oil – 3 tblsp
Garlic – 2 to 3 cloves, crushed
Vinegar – 2 tblsp
Salt – 1 tsp
Sugar – 1 tsp
Chilli Flakes – 1 tsp

1. Slice the eggs lengthways.
2. Cut all the capsicums, remove the seeds and ribs. Cut into thin strips.
3. Put the eggs, capsicums and macaroni in a salad bowl.
4. Put all the dressing ingredients into a bowl and mix well.
5. Pour over the salad and toss.
6. Serve chilled.
