Shrimp and Corn Soup Recipe

Shrimps – 1 1/2 cups, cooked
Corn – 2 cups
Basil Leaves – 1/4 cup, chopped
Olive Oil – 1/4 cup
Onion – 1, large, diced
Potato – 1, large, peeled and diced
Garlic Paste – 1 tblsp
Chicken Stock – 4 1/2 cups
Thick Cream – 1 cup
Salt – 1/2 tsp
Pepper – 1/4 tsp, freshly ground

1. Heat the oil in a pan, add the onions, potatoes and garlic paste.
2. Saute till the onions turn translucent.
3. Add the corn, basil and chicken stock.
4. Bring to a boil and then simmer for 10 minutes.
5. Add the shrimps, cream, salt and pepper.
6. Heat thoroughly.
7. Serve hot.
