Sindhi Sai Bhaji is a traditional and flavoursome dish hailing from Sindhi cuisine. This wholesome vegetarian recipe features a variety of vegetables, including carrots, capsicum, onion, cabbage, potato, brinjal, tomato, okra, and spinach.

These vegetables’ flavours and textures are enhanced by adding green gram dal and chana dal, making a protein-rich and nutritious dish.

The vegetables and lentils are cooked in a pressure pan with aromatic spices such as red chilli powder, coriander powder, and turmeric powder to prepare the Sindhi Sai Bhaji. The dish is then pressure cooked until tender and mashed or blended to create a flavorful and thick bhaji.

Tempering asafoetida powder is prepared separately and poured over the bhaji to add a final touch of flavour. This enhances the taste and aroma of the dish.

Sindhi Sai Bhaji can be enjoyed with steamed rice or roti. It serves as a complete meal on its own but can also be paired with other Sindhi delicacies like Sindhi Kadhi or Sindhi Koki. The recipe yields a generous serving size for family meals or gatherings.
