Aval Vilayichathu

Ingredients:
Melted Ghee – 1/4 cup
Coconut Slivers – 1/2 cup
Sesame Seeds – 1/2 cup
Roasted Gram – 1 cup
Jaggery – 1 1/2 kg
Water – 3 cups
Coconuts – 4, finely grated
Beaten Rice – 1/2 kg
Cardamom Powder – 2 tsp

Method:
1. Heat ghee in a pan.
2. Lightly fry coconut slivers, sesame seeds and roasted gram. Set aside.
3. Dissolve jaggery in 3 cups of water.
4. Heat over low flame to make 6 cups syrup. Strain.
5. Bring this syrup to boil in a heavy vessel.
6. Add grated coconut and cook over a low flame, stirring constantly till one-thread consistency is reached.
7. Remove from fire.
8. Cool slightly and add the beaten rice.
9. Mix well.
10. Add the fried ingredients along with cardamom powder.
11. Mix and cool.
12. Store in a dry container.
