Tomatoes – 1 cup, chopped
Sugar – 1/2 cup
Juice of 1 Lemon
Ginger – 1/2 inch piece, cut into thin slivers
Salt to taste
Raisins – 1 tblsp
1. In a thick bottomed saucepan, put all the ingredients together, except lemon juice.
2. Simmer on low heat till tomatoes are cooked and form a chutney consistency.
3. Cool, add lemon juice and mix thoroughly.
4. Bottle and refrigerate, it will keep for about 2 weeks.
