Sweet Potato Coconut Dry Curry


Sweet Potatoes – 2, large
Green Chillies – 1 to 2, cut
Coconut – 2 tblsp, grated
Jaggery – a small piece (optional)
Salt to taste

For Seasoning:
Oil – 1 tblsp
Mustard Seeds – 1/2 tsp
Ginger – 1/2 inch piece
Red Chilli – 1, broken
Curry Leaf – 1 sprig

1. Boil sweet potatoes in their jackets.
2. If desired peel, otherwise keep the skin on and cut into small pieces, while still warm.
3. Heat oil, add seasonings, when done, add green chillies and stir fry.
4. Add sweet potato pieces, grated coconut, salt and jaggery.
5. Fry for 1 to 2 minutes more and remove from fire.
6. Serve hot with rice.
