Sweet and Sour Onion Chutney Recipe

Onions – 6, medium, chopped
Green Chillies – 8 to 10, cut
Curry Leaves – 2 sprigs
Turmeric Powder – 1/2 tsp
Tamarind – a large lemon sized ball
Jaggery – a small piece
Salt to taste

For Seasoning:
Sesame Seed Oil – 3 tblsp
Mustard Seeds – 1/2 tsp
Asafoetida – 1/4 tsp
Fenugreek Seeds – 1/4 tsp
Urad Dal – 1 tsp
Chana Dal – 1 tsp
Chilli Powder – 1 tsp (optional)

1. Boil tamarind in water, extract pulp, set aside.
2. Heat oil, add seasonings except chilli powder.
3. When dals are browned, add onions, green chillies and curry leaves.
4. Add turmeric powder and fry till onions are browned.
5. Add tamarind extract, jaggery, chilli powder if desired and salt.
6. Cool till oil surfaces.
7. Remove from fire.
8. Serve with rice.
