Drumstick Flower Dry Curry Recipe

Drumstick Flowers – 2 cups, freshly picked
Onion – 1, medium, chopped
Turmeric Powder – 1/2 tsp
Tamarind Pulp – 1 tsp
Jaggery – 2 tsp, powdered
Salt to taste

Grind to a paste:
Coconut Gratings – 2 tblsp
Red Chillies – 3
Coriander Seeds – 2 tsp
Cumin Seeds – 1/2 tsp

For Seasoning:
Oil – 2 tblsp
Mustard Seeds – 1 tsp
Curry Leaves – 2 sprigs

1. Wash flowers, add some water and salt, cook till soft and set aside.
2. Season mustard seeds and curry leaves in oil, add onion along with turmeric powder, fry till onion is browned.
3. Add ground paste, stir fry for 1 to 2 minutes.
4. Add tamarind pulp, jaggery and cooked flowers.
5. Simmer on low heat for 3 to 5 minutes, till quite dry.
6. Serve with rice and dal.
